The San Miguel de Allende wine scene has been heating up for years, making this opening primed for local collaboration. The hotel cemented a partnership with Santísima Trinidad, bringing a range of their wines such as a Sauvignon Blanc,  White Blend (Chardonay, Macabeo & Moscatel), and Cabernet Sauvignon to life paried with the vibrant NŌIA menu, showcasing the vision of Chef Tovar.
